«Non ho mai conosciuto Audrey Hepburn». Questo l’attacco del libro (Audrey mia madre, Mondadori Electa) che il figlio Luca Dotti ha dedicato alla celebre attrice britannica scomparsa nel 1993. Per Dotti, l’unica donna che ha conosciuto è stata la madre di famiglia, l’appassionata di cucina e dell’orto. La donna che aveva lasciato Hollywood e il cinema e che si occupava della casa in Italia che condivideva con Luca, il marito (lo psichiatra Andrea Dotti) e il figlio di primo letto, Sean Ferrer. «Alcuni pensano che rinunciare alla mia carriera sia stato un grande sacrificio fatto per la mia famiglia, ma non è per niente così», raccontò una volta la stessa Hepburn. «È la cosa che più desideravo fare».

E così, l’aura mitica di Audrey non trapelava quasi mai tra le mura domestiche. Insomma, per Luca lei era innanzi tutto una mamma immersa nella vita familiare, brava cuoca e ospite conviviale. Per questo, Dotti ha deciso di scrivere un ritratto privato della “sua” Audrey, grazie al ritrovamento di un quaderno sfilacciato sul quale la madre trascriveva le sue ricette, fil rouge del racconto. Più dell’aspic di uova – decantato dai suoi biografi – a ritrarre con fedeltà Audrey sono la pasta che si portava in valigia quando viaggiava, i gelati che divorava nei pomeriggi trascorsi con le sue migliori amiche e tutto ciò che di commestibile riusciva a ricavare dal suo adorato orto.

«Prima di “lasciarla andare”, devo raccontare ai miei figli chi era la loro nonna», scrive Dotti, «chi si nascondeva dietro quel tubino nero e quei grandi occhiali da sole. E nel farlo, credo che le nostre immagini domestiche non siano meno importanti di tutte quelle impeccabili foto in bianco e nero che la ritraggono, e che le note a margine delle sue ricette preferite contino tanto quanto quelle sui suoi copioni».

In Audrey Hepburn, An Elegant Spirit, Hepburn's son Sean Hepburn Ferrer describes his mother as having a "serious addiction" to carbs. Her favorite dish? Spaghetti al Pomodoro, smothered in sauce.

Try her recipe, below.

Ingredients:

1 small onion, diced

2 cloves garlic, minced

2 carrots, diced small

2 stalks celery, diced small

2 large cans (28 oz. each) peeled Italian Roma tomatoes

1 large bunch fresh basil, washed

2 tbsp extra virgin olive oil

1 lb. spaghetti pasta

Salt to taste

Freshly grated Parmigiano-Reggiano cheese

How to make:

In a large pot combine onion, garlic, carrots, celery, and tomatoes. Drizzle in the extra virgin olive oil. Take half of your basil and remove whole leaves from the stems (you should end up with about ½ cup of leaves). Add the basil leaves to the pot. Bring sauce to a simmer for 45 minutes, stirring occasionally and breaking apart the larger tomatoes as they cook.

While the sauce is simmering, fill another large pot with 4 quarts of water and slowly heat it up. Take the remaining basil and cut the leaves into small pieces using a pair of scissors—this will help prevent bruising and blackening of the leaves. Reserve.

After 45 minutes, or when the diced vegetables are tender, turn off the heat. Let the sauce rest for 15 minutes.

Meanwhile, bring the pot of water to a rolling boil. Add salt, if desired. Cook your spaghetti pasta until al dente (retaining a little bit of snap to the core). Drain and rinse the pasta with lukewarm water to prevent sticking.

Taste the sauce, add salt to taste if desired. Serve pasta topped generously with sauce, grated Parmigiano-Reggiano cheese and the remaining freshly cut basil leaves.
